![]() Grape Harvest
We grow our vines according to organic farming. This means not only avoiding the use of chemicals (only copper and sulfur are allowed in spraying), but in general caring about plant health not forcing it to exceeding productions. From the end of July with the so-called “green harvest”, we reduce the number of bunches of each plant (manual thinning), so as to allow optimal maturation of those selected. At the beginning of September, we start close monitor of the stages of maturation of the grapes in order to establish with precision the optimal moment of the grape harvest of each variety. Depending on the type of grapes, the harvest takes place between the beginning of September to the end of October. The harvest is carried out by hand, selecting with care firstly the bunches in the vineyards and then the berries in the wine cellar (sorting table after destemming). We harvest in the morning and process the grapes in the afternoon so to keep the temperature under control. Therefore we can process up to a maximum of 5.000 kilos of grapes a day. |
